Udon noodles come in several different thicknesses. They also have different names depending on their thickness. According to the JAS standard(Japanese Agricultural standards), “Udon” is defined as having a diameter of 1.7mm or more, “Hiyamugi” as 1.3-1.7mm, and “Somen” as less than 1.3mm.
